About Your Hosts
This trip is hosted by two women who have a love for food, fun, and the city of Paris. Susan Holding, alumna of Cordon Bleu, is the owner of the Little French Bakery pastry school and author of The Little French Bakery cookbook. Denise Pedersen of Fox World Travel is a veteran in the travel industry who is passionate about travel and decided she wanted to take people to Paris for food, fun, history and a lifetime of memories.
It all started when Denise met Susan Holding, author of The Little French Bakery cookbook at a book signing in November of 2014. Denise had just returned from working in France, for Trek Travel as a bike guide taking people on biking vacations throughout Europe. She lived in southern France and had 19+ years of tour directing experience and was previously the Director of Sales for a large tour operator in the Midwest. Denise has taken large and small groups to Paris for over 10 years. Paris is one of her favorite destinations to explore and eat her way through.
The road to the Little French Bakery has taken many turns.
I’m an RN, BSN, MBA who followed a dream, went to Paris, and earned the Diplome to Patisserie at Le Cordon Bleu. The courses spanned over two years. I loved my experience at Le Cordon Bleu. It was hard, tiring and very rewarding. Every time I’m back in Paris, I visit the school. I really wish I could have met Julia Child. She made such an impact on cooking and cuisine in the U.S.
I love to travel. Whether it’s a few hours away to Door County, or across the globe, I’m ready for an adventure. Our trips always include a taste of the local foods. We love spice! I hope you’ll join me as we explore the world.
Susan also teaches pastry classes at her kitchen, The Little French Bakery, which has been featured in radio, TV, Madison Magazine, BRAVA Magazine, Wisconsin Trails Magazine, Isthmus Newspaper and Spoonful Magazine.
