Bill Tressler and his wife Michelle started Hinterland in an old cheese factory just outside of Green Bay, Wisconsin with nothing more than their own limited funds, sweat, passion and insanity.
In 1995, after I nearly burned down the brewery (not kidding), we decided to expand and renovate a turn-of-the-century Green Bay meat-packing warehouse into a production house—and a restaurant featuring farm-to-table culinary experiences.
Now twenty years later, Michelle and I still lead the spirit of Hinterland though a passionate and talented staff. Along the way, we’ve launched three restaurants because we believe in great ingredients and great tasting experiences. At the end of the day, we really enjoy hanging out with friends talking about killer beers and exceptional food.
We invite you to try our Hinterland beer at our affiliated restaurant, The Whistling Swan Inn and Restaurant in Fish Creek, WI. We are also more than excited to invite guests to experience our latest restaurant, located across the street from Lambeau Field in Green Bay’s Titletown District. Your journey begins aboard a motorcoach transfer from select cities to Chicago O’Hare, where you will board your overnight flight to Europe.
Upon arrival in Brussels meet your Tour Director for a group transfer to the hotel. Begin your tour with a visit to the MUSÉE DE LA GUEUZE. This brewery, otherwise known as the CANTILLON BREWERY, has produced Lambik and specialty beers. This evening enjoy a welcome dinner at LE BIER CIRCUS which is a "must-see" spot in Brussels. The beer menu goes on and on with some very rare selections. You could be here for hours just trying to sample all the small, regional Lambics they have to offer. (Dinner)
Brussels, the modern center of the European Union, still has Old-World charm. Meet your Local Guide to enjoy the sights, including the GRAND’PLACE and the MANNEKIN PIS, on your morning city orientation. The afternoon is at leisure to enjoy Brussels and to shop for famous Belgian lace and chocolates or perhaps enjoy a beer at one of the famous beer cafes. (Breakfast)
Depart for the university city of Louvain, where six centuries of brewing tradition and latest technology stand for a refreshing and thirst-quenching quality beer: STELLA ARTOIS. Discover all the secrets of the brewing process. Visit the brewing hall, the filtration and the filling plant, where you can witness how bottles, cans and kegs are filled at an enormous speed. Continue to GRIMBERGEN, one of the few surviving abbeys to have been established by the founder of an order, in this instance St Norbert. The famous Grimbergen beer, originally brewed by the monks of the Norberto abbey, is today brewed by the Alken-Maes company, part of the Scottish & Newcastle Group since 2000. The label of the Grimbergen beer still shows the symbol of the abbey, a phoenix recalling that the abbey was burned several times but always rebuilt, for the last time in the 1830s. The Grimbergen beer has been brewed at least since the 1600s; when the abbey was reopened after the French Revolution, beer was supplied by a local brewer. Return to Brussels this afternoon. A drive today to Chimay, famous worldwide for its Trappist beer and cheese. Visit OUR LADY OF SCROUMONT’S ABBEY, where trappist beers have been brewing since 1862, for a beer and cheese tasting. Continue to Boullion, located in the Ardennes Forest, near the border with France for a visit to the DUKE OF BOUILLON CASTLE, one of the most beautiful medieval fortresses in the country. Return to Brussels and enjoy a gourmet beer dinner at a local restaurant. (Breakfast, Dinner)
Journey to INGELMUNSTER CASTLE, a 1736 mansion surrounded by a moat. Enjoy a special Kasteelbier in their café. The castle is owned by Van Honsebrouck brewery and is used to mature beers from the brewery. Continue to Bruges, one of Western Europe’s most perfectly preserved medieval cities. Originating during the defense of the Flemish coast from Viking attack, and once an important wool trading port, it now proudly tells the story of art and architecture of the Middle Ages. A CANAL CRUISE (weather permitting) will give you your first feel of this delightful town. Your Local Guide will show you the Church of Our Lady, the MARKET with its belfry, the Basilica of the Holy Blood, and the City Hall. (Breakfast)
Journey to ST BERNADUS, located about two miles outside the beautiful village of Watou. It is perhaps best known for its dark, complex and satisfyingly rich Abt 12. Watou is the only Trappist brewery where the monks still do all of the brewing. Continue to WESTVLETEREN BREWERY, founded in 1838 inside the Trappist Abbey of Saint Sixtus of Westvleteren, the smallest of the Trappist breweries. Their three beers have acquired an international reputation for taste and quality, as well as the limited availability of the beers which are not brewed to normal commercial demands. Visit the 'CLAUSTRUM', an exhibition room in which the monks show the life in the abbey. Return to Bruges and enjoy dinner at leisure. There are dozens of great bars in close proximity to museums, cathedrals, parks and public squares. (Breakfast)
The first stop today is Antwerp, the second-largest Belgian city and one of the world’s most important ancient seaports. Visit the famous ROCKOX HOUSE, where the art collector and friend of Rubens lived; the PLANTIN-MORETUS MUSEUM, a permanent exhibition dedicated to the early days of book printing in the 16th century; and the GROTE MARKT. Continue to WESTMALLE ABBEY to view a short film about the Trappist Monastic way of life and enjoy their fine cheese and beer in the café across the street. Return to Brussels for a farewell beer dinner this evening. (Breakfast, Dinner)
